People who are better at life than me.

I la-ove it when an abundance of inspiration hits my inbox in the mornings.  Today I was lucky enough to find two amaze graphic design videos that make me want to be a better designer, coworker, artist, and step-dog owner.  Yes, step-dog owner.  These videos are THAT good.

This first one, I don't just love because it's my wanna be best friend yes I do, but the talent, and the precision in the piece is just incredible to me.

And the second one.  Oh the second one!  Takes me STRAIGHT back to my college days - it reminds me so much of something we would have been assigned in class.  { Minus the video part, just the interpretation of words and their actions. }

We had a book in school that had little challenges like this example throughout the entire book.  It's a book I was frantically searching for last year, but couldn't find it, so assumed I had donated it years ago.  I was so excited and found it when I was packing up for my move!  Once things settle down next week, I can't WAIT to pour myself a big glass of ice water wine, turn on my computer, plug in the headphones and get jiggy with it.  Graphic Design style.

And because we all know I can't leave things in even numbers, and feel the constant need to keep things in odd numbers, I'll leave you with a video from my favorite chef, cooking some cauliflower couscous...a side dish I've been dying to try my hand at for weeks now!

DYK? Vegans can eat buffalo wings, too.

!!!!!!!!!!!!!
::via::

!!!!!!!!!!!!

Ok, ok - maybe not wings per say, but you can bet your pretty patooey that this recipe will be in the recipe rotation in the upcoming weeks, if not this week!  I truly squealed when I read this.  My first thought was that there was tofu or tempah in there, but when I heard it was my most favorite vegetable?!  Stick a fork in me and call me Sally.

Thanks for putting up with me and my probably really boring posts about vegan food, but this is such a thrilling adventure for me!  Yes, food is thrilling to me.  And yes I need a hobby.  Tell it to Sally.  I'll be too busy eating wings.

Recipe inspiration overload.

This happens every now and again - where my favorite blogs that I follow just kill it day after day with their amazing recipes. These past few weeks have been no exception!  It could be because I've been on a very strict chicken noodle soup and sweet potato diet for nearly 3 weeks now, but I've been bookmarking recipes { what feels like } by the dozen almost daily!  I'm convinced that this vacation is going to cure what ails me, and I'll come back in perfect health (a girl can dream, right?!) so when we get back to CO soil.  Here are a few things I'll be itching to cook.

Smitten Kitchen's :: Broccoli Parmesan Fritters
Oh She Glows :: Raw Taco Salad
                          Spicy Potato 'n Black Bean Burittos
                          Thai Crunch Chicken Salad
How Sweet it Is :: Asiago Portobello Burgers with Roasted Red Peppers + Balsamic Glaze
Everyday Musings :: Sweet Potato & Black Bean Soup
What's Cookin, Chicago? :: Green Pobalno Rice
Create Loves :: Green Tea Ice Cubes
Skinnytaste.com :: Oven "Fried" Pickles

Good, right?

It's better, nescafe?  Will any Grace anyone?  Yes?  No?  Yes?  No.  Okay then.

I know most people use Pinterest for things like this, with a witty but cute album { or whatever they are called } title, but asking me to spend just a quick 10 minutes on Pinterest to pin things like this is like asking the sun not to rise.  Ain'tgunnahappen.  It's either an all day Pinterest day, or a no Pinterest day.

That is such a hard word to type.  Pinterest.  Pintrets.  Piinterset.

Okay, I'm gracefully bowing out now....

Meals :: Week of April 1st!

I haven't moved since the last post.

I should have known it would have unfolded this way.  But with Giada playing in the background, it's really hard to clean and not to think about what meals I'll cook for the week.

I've been pretty inspired by a few blogs out there who do their meal planning for the entire week { never you mind these are mostly families of 4+ and I live alone with my cat.  Meow. } but I have found that meal planning on a Sunday helps my week nights operate much more smoothly.  I like being able to come home and do my workout then just dive right into cooking vs making stops at the grocery, forgetting things etc.  Plus it really cuts down on spontaneous eating and unnecessary calories.   I just finished mapping out my meals for the week, and would love to share!  Without further adieu - here is my week's muchies!

Y.  U.  M.  I am beyond excited for each week night's dinners this week!  My favorite part is how easy and healthy each of them are.  I really just need to pick up the fresh ingredients from the grocery b/c I have essentially all of the other ingredients already, so this week won't cost me an arm and a leg in eating!  Aside from the pizza puffs and beef stir fry, I've made all the other recipes already so they are really familiar to me.  I'm equally excited for the new, and familiar flavors packed into each one.

Also, I'll be boiling up some of most recent obsession...beets! for salads that I'll take for lunches + leftovers, too.  I'm going to be making some of these { http://pinterest.com/pin/261982903292929057/ } to grab in the mornings for breakfast.  Get in mah belly.  I'll report back on how muffin tin cooking goes!

Oh I almost forgot - I won't actually be eating Birthday Cake on Friday b/c I've been off sweets for a few months now, but with Friday being my aunt Jen's birthday, I just have a feeling we'll be going out for some yummy dins in celebration Friday night!

Any good recipes you'd like to share?  I'd love to hear what your week's meals look like!

Okay for REALZ, I'm really going to go clean now...
